Rutty venison can taste musky, gamey, or strongly metallic — driven by hormones in the meat and scent contamination from tarsal glands during field dressing. Prevent it by removing the tarsal glands before any other cut, never letting them touch meat or your knife, and aging the carcass 4-5 days before processing.
The tarsal glands are scent-active organs on the inside of the hocks. They produce a strong urine-soaked smell during rut. Cut them off whole, set them aside, and wash hands and knife thoroughly before continuing.
